Hi, I was wondering if you would like to take a quick trip to Italy with me today?

warning:  You may be a thinkin in Italiano after this a post. lol!

First of all-a, Let’s a sprinkle some a fresh asparagus with olive oil,  and lemon pepper.  We will roast it in a the oven at a 350degrees.  Not too a long, just a barely tender.  It will soften up more when added to the a main dish.

Mean-a-while we make a white Alfredo sauce.  Recipe will follow at the end.

We cook a little bacon, boil a little chicken, and cut up a bit of ham.  A lot of a meat, I know, but oh so delicious!

Missed this picture, but I will tell you a good hint for cooking chicken.  Put boneless chicken breasts in a pot of water, bring to a boil, cover and turn off heat.  Let sit for 20 minutes.  Voila (oh, that’s French), perfectly tender cooked chicken!

Now we a sauté some a onion in olive oil or butter.  I used butter.  Cook a it slow on low until caramelized. Then add mushrooms and a red pepper.  What, You no like a mushrooms  Well then a just a leave a them out!

Cook a bit of a pasta.  Bow tie, angel hair, whatever you like a!  I used a Fettuccini because that’s a all I had.,

Place pasta in serving dish, add vegetables and meat trio Alfredo. Sprinkle with a bit more fresh Parmesan and a halved grape tomatoes.

It’s a delicious ‘Pasta Medley’  Named by my friend, Peggy who gave me this yummy recipe.:

Alfredo Sauce:

Make a rue using 4 Tbs. butter, 4 Tbs. flour.  Add l Qt. half & half or cream.  Cook till thickened. Add milk to thin.  (I used half & half and then added 1/2 pt. cream).  Add 1/2 to 2 cups parmesan or asiago cheese. ( I used an entire sm. pkg. of Italian cheese blend.) a bit of onion and garlic powder.

Add what you like of the three meats.  I added more chicken and just a bit of ham and bacon

Hubby and I enjoyed it with a yummy spinach salad with candied pecans, raspberries, kiwi’s, mandarin oranges,, poppy dressing; and some fresh bread.  If you’re a wine drinker that would set the mood.  As for me, I just wished I was watching “Under the Tuscan Sun”.  Love that movie!

Looks fab. I always roast my asparagus this way. Til barely tender. I love them in pasta too. Your dish looks wonderful.
I spent 3 weeks in Italy with my Mom about 6 years ago. I was IN LOVE!!!

Yumm! I actually have never roasted asparagus! We always have it grilled, steamed, or sauteed. As luck would have it...we are having it for dinner tonight. Roasted it is gonna be. Thanks for the inspiration!

Roasted asparagus is the only way! I'm feeling Italy tonight too. I set the table with our Italian dishes for our anniversary on Valentine's Day. It will have to do until we can get to Italy ;o)

Hi Jann,

This looks sooo delish! I'm sure my hubby and kiddos would love this - they love italian food, as do I. However these days I omit the meat (for myself only), as I have been vegetarian for a few years now due to health reasons. :) But I love to cook and this looks yummy! :) Take care and have a wonderful week!

I have made this so many times, but your blog makes me want to make it again. My kids are the ones that dubbed it Pasta Medley. They love it too! The asparagus is the star of the whole dish. I have even put fresh spinach in at the very last, just barely cooked. Yum!
