Hello my friends! It’s that time of year when we are looking for fun festive foods. Try saying that three times!
I wanted to share this yummy Avocado Pomegranate Salsa with you that I got from my SIL, Laurie. It is so delicious and looks so pretty for the Christmas holiday.
I am sharing this with Holiday Treats Pink Saturday. Notice I threw in the pink bowl? Must confess. Didn’t do it on purpose.
Avocado Pomegranate Salsa
1 lg. Pomegranate 4-5 Avocados, diced
2-3 Roma tomatoes, chopped 1 Orange
Juice of 1 lemon 1 Tbs. Kosher salt.
1 Serrano pepper 1 1/2 tsp. Coriander
1 tsp. Cayenne
Toss gently and serve with Dorito Chips.
Just thought I would mention that Costco sales a twin pack of already seeded pomegranates in their produce section. Love it!
Now you guys are probably smarter than the average blonde bear so you might already know this. But I’m telling you anyway. lol! My son in law, Dustin taught this old gal a new trick. After cutting the avocado in half just chop your knife into the pit and pop it right out.
Take your knife and cut small lines back and forth in your avocado. Take a spoon scoop them out and voila you have perfectly diced avocado.
Isn’t that just beautimus? Another crazy word used by my family.
