Best Zucchini Bread. . .The Glaze Gets Raves!


Hello my friends, I know that there are 1,000’s if not millions of recipes out there for Zucchini Bread.

BUT, I just have to rave about how delicious this recipe is!!
I got it years ago from a dear friend.

I dressed it up with pretty garden blooms, Zinnia’s and Portulaca to help convince you. Hee-hee!  See how they bring out the colors of my pretty china platter?

I really don’t think you need any convincing.  My oldest daughter, Nichole took a loaf to work the other day and she said everyone raved about it.

Seriously, there are two things that I love about this bread:

1.  It has a crunchy outside but the inside is so moist.

2.  The glaze, did I mention how much I love the glaze?  lol!

Zucchini Bread
3 eggs                          1 c. Oil                     2 1/2 c. Sugar
3 tsp. Vanilla               1 tsp. Soda              1/2 tsp. Baking Powder
1 tsp. Cinnamon          3 c. Flour                 2 c. Zucchini, grated
1 c. Nuts

Combine eggs, oil, sugar, & Vanilla.  Beat until well blended.  Add dry ingredients and blend.  Stir in squash and nuts.  Grease 2 loaf pans, (I spray with Pam.  Fill 3/4 full.  Bake at 350 for 1 hour.  Cool in pans for 15 min.  Remove and finish cooling on a rack.

Glaze:

1 Tbs. Butter, melted                  1 Tbs. lemon juice
1 Tbs. Milk                                   1 C. Powdered Sugar

Stir together, if too thick add a little more milk.  Spread on top of cooled loaves.

The truth is, there is only one problem with this bread.  I can’t stop eating it!

Even with the glaze I like a thin spread of butter. . .YUM!  (Me and Paula Deen)

Oh my....this looks sooo good. I am sitting here with my tea LONGING for a piece now. I am going to pass this recipe off to my daughter. I could never make it, because I would eat the WHOLE loaf! Enjoy your day!

YUM!! I have a recipe for zucchini bread that has always been my go-to. It's very similar to yours, but it has a crumb topping. I'm thinking that the next time I make it, I'm going to add your glaze to it, because glaze makes everything better, right? :) --Fran
